Holiday Cooking, Blogger Style (2nd Edition)

Overwhelmed With Joy is hosting her 2nd Annual Holiday Cooking, Blogger Style. Here are a few of my favorite tried and true holiday recipes.

This is a Paula Deen recipe that is great for Christmas morning.

Baked French Toast Casserole with Maple Syrup

  • 1 loaf French bread
  • 8 large eggs
  • 2 cups half-and-half
  • 1 cup milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • dash of salt
  • Praline topping
  • Maple syrup

Slice french bread into 20 slices, 1 inch each. Arrange slices in a generously buttered 9×13 x 2 pan in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a whisk until blended, but not too bubbly. Pour mixture in between the slices. Kind of push the bread down into the mixture to make sure that everything is soaking. Cover with foil and refrigerate overnight. The next day, preheat oven to 350. Spread praline topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.

Praline Topping

  • 1/2 pound butter, cubed
  • 1 cup packed brown sugar
  • 1 cup pecans
  • 2 tablespoons light corn syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Combine all ingredients in a medium bowl and blend well.

This is a recipe that I got from a friends mother.

Cranberry Salad

  • 2 (3 ounces each) packages red jello
  • 1 (3 ounces) package orange jello
  • 3 cups hot water
  • 2 cups cold water
  • 12 ounces cranberries
  • 1 cup cranberry sauce
  • 3-4 cups apples
  • 2 1/2 cups sugar
  • 1 (16 ounces) can crushed pineapple, juice reserved
  • 1-2 cups red grapes, cut
  • 1/2 cup nuts
  • Orange juice

Combine ground cranberries, cranberry sauce, apples, sugar, drained pineapple and pineapple juice plus enough orange juice to equal 1 cup, grapes and nuts in extra large bowl. Mix jello and water and add to the fruit mixture. Pour into molds and chill. Top with dressing.

Dressing

  • 1 large package cream cheese, softened
  • 1/2 pint whipping cream
  • 1/2 cup sugar
  • 2 tablespoons mayonnaise

Beat cream cheese. Slowly add whipping cream and sugar until the dressing has a medium thickness, then add the mayonnaise.

This is something we always have around for the holidays.

Puppy Chow

  • 1 (12 ounces) box Crispix cereal
  • 1 (12 ounces) chocolate chips
  • 1 stick butter
  • 1 (12 ounces) jar peanut butter
  • 1 pound box powdered sugar

Melt together peanut butter, chocolate chips and butter. Cook 3 minutes in microwave. Pour over cereal and stir until covered. In plastic bag, pour powdered sugar and mixture and shake.

    The french toast casserole sounds soooo good. I love pralines. I’m definetly going to have to make this.

    Love the twist on French toast! I make a stuffed french toast but I think I will make this instead for a nice change!
