Menu Plan Monday – February 18

Monday – Cracker Barrel for our nephew’s birthday dinner

Tuesday - Vietnam Fried Rice

Wednesday - Lemon Chicken with Green Beans and New Potatoes, salad, rolls

Thursday – Pork Chops alla Pizzaiola, baked mashed potatoes with parmesan cheese and bread crumbs, italian chopped salad

Friday – Hillbilly Goulash, vegetable

Saturday – Breakfast - Mini Frittatas, sausage, fruit - Dinner – Chicken Tortilla Soup, honey cornbread

Lush Goodness

I won my first Bloggy Giveaway from Not Trying for a Boy.  I won a bottle of Lush “B” Never Too Busy To Be Beautiful body wash.  It smells heavenly. Now along with my every other night Lush baths, I can also use the body wash every morning.

Just another product to add to the list of things to buy from Lush.

Seeing Old Friends

This past weekend, our family went to see our friends, Jonathan and Kim and the church they now pastor at.  Jonathan used to be the Youth Pastor at the church we attend and has recently accepted a Senior Pastor position at a church a couple of hours away, near the St. Louis area.  He was having his installation service on Sunday, so we loaded up the car and headed down.

We haven’t seen them or their son, Elijah, for a couple of months.  Camden and Caleb were beside themselves to see their friend.  Camden and Elijah are only 2 months apart in age and have grown up together since birth and are best friends.  They still ask for each other on Sundays and throughout the week.  It is very sweet. 

We are hoping to go back down in March while Caleb is on spring break and be able to hang out with them for a few days and then hear Jonathan preach on that Sunday.

Favorite Ingredient Fridays – Dark Chocolate Caramel Fondue

This is the recipe I am planning on making for my husband on Valentine’s Day.

  • 1 cup light cream
  • 6 tablespoons dulce de leche syrup or caramel ice cream topping
  • 9 ounces bittersweet chocolate, coarsely chopped

In a small saucepan, combine the cream, dulce de leche syrup (if using the caramel ice cream topping, add more cream) and chocolate and cook over low heat, stirring until smooth, about 3 minutes.  Transfer to a fondue pot and keep warm.

Things to Dip in the Fondue:

  • marshmallows
  • strawberries
  • kiwi fruit, sliced
  • dried pears
  • pretzel rods
  • pound cake, cubed
  • shortbread fingers

Tuesday Happenings

My Tuesday morning bible study started back up today.  This spring we are studying, Living Beyond Yourself.

This is the third Beth Moore bible study that our women’s group has studied and I am sure it will be as excellent as the first two were.

The rest of our day was spent going to vote in our state primary and then eating pancakes, that I made for my family, for Pancake Tuesday.
